These folded omelettes are not what I do. It seems what I thought was an omelette that I make, with everything shoved in at the start, is really a spanish omelette *~Lakshmi~*

You need a good pan, cast iron being the best, and a low heat. Thin pans and to hot and you'll have a nasty black bottom,
