As I have an intolerance to wheat I am limited to what I can have that is naughty but nice. The shop bought cookies and cakes are very expensive for what you get and some are not very nice either.
I love cookies and especially if they are chewy as well. I came up with this recipe and they are really yummy, easy to make and you can add all sorts of things to them.
Basic Cookie Mix
6oz Gram flour
2oz Soya flour
4oz soft margerine
6oz sugar ( I use half brown and half white)
1 Egg
A little milk to mix.
Add : 2oz nuts or candied peel or ginger pieces or glace cherries, or chopped dates or add chocolate chips. In fact anything you like.
Sift the flour into a large mixing bowl and rub in the margerine to resemble bread crumbs. Don't worry if it is a bit sticky it does not matter.
Add the sugar and mix well then add the dates or whatever you want to your cookies and mix well.( You will need to break the brown sugar up so it does not clump together)
Add the egg and enough milk to bind don't add too much a little at a time until it binds well.
Turn out onto a floured board and knead into a ball.( Use Gram flour on the board )
Cut it in half and roll out the two halves into a sausage shape it will be soft and a bit awakward to handle at this stage. Wrap in greasproof paper and place in the fridge for at least 30 minutes. You can put it into the freezer if you like for about 20 minutes it makes it firmer.
Cut into 1/4 inch biscuits and cok for 15 minutes Gas mark5/190C/375F
Place on a wire wrack to go cold.
If you melt some chocolate you can dip the cold cookies into it and have half coated chocolate cookies, naughty but nice.
