I came up with this mix of flours you can use potato flour if you do not like Soya flour or cannot eat soya. The cake is moist and light. I still use ounces so you will have to convert to grams sorry but I grew up with oz not grams and still work that way.
Victoria sandwich mix
2oz Gluten Free Bread flour
1oz Maize meal
1oz Soya flour
1 teaspoon gluten free baking powder.
4oz soft margerine
4oz caster sugar
2 eggs beaten
Sift all the flours and baking powder into a bowl, add all the other ingredients and beat well. This is the all in method. Of course you can cream the margerine and sugar until light and fluffy then add the eggs and then the flour if you prefer. Personally I use the all in method it's quicker and works just as well.
Once you have the cake mix you can make small cakes in paper cases or make a Victoria Sandwich. I make up two batches of this cake mix if I want a deep Victoria sandwich and use one batch in each cake tin.
If you want chocolate cake add cocoa powder as you would any other cake mix.
