Ingredients 9 oz self raising flour 12 oz treacle 8oz medium oatmeal 4 oz butter or margarine 4 oz brown sugar 1/4 pt milk ground ginger to taste 2 eggs -- The amount of ginger would depend on how spicy you like your cakes. I put about half of one of the pots from the supermarket in. The first time I put a whole pot in, it was as hot as a curry with all the side effects ;D The amount of liquid ingredients seem a bit much when I had mixed it so I just added till it looked ok- I probably used about half of it. But maybe that was the wierd margarine i used. Pre-heat oven to 130°C (fan assisted); gas mark 3. * Place flour, oatmeal, brown sugar and ginger, in a large bowl. * Melt syrup and butter with the milk in a pan. Pour melted ingredients in with the dry ingredients and mix together. * Beat in the eggs and again mix well. * Grease a baking tin and line with greaseproof before pouring in the mixture. * Bake for 45 mins Yum!

it ends up a bit like the jamaican ginger cake you can buy- yum. Traditionally parkin should be left in a tin for a week before you eat it- it gets more sticky or something. But it would never last that long in my house
