Ok like most of us I have gained weight over the Christmas Hols and with one thing and another I been told I MUST lose weight. Easier said than done but it has to be done somehow. So I am on the look out for easy to make Vegetarian meals dinners mainly. Something that I can cook up for me and add meat to for my husband. I have found if I eat 3-4 meat free meals a week I am losing weight. So if you have any recipes that you can pass onto me I would love to try them out.

I have just bought the weight watchers magazine wulfcwen so I'll have a look in there 4 you. On WW you can eat all the veg you want, if you make a ratatouii you will have something resembling a meal. But eat as much as you want and it will fill you up. So, if you make this with no oil, you can eat as much as u want or even a squirt from one of those sprays for frying, can't hurt. ----- www.healthyweightforum.org/eng/healthy_recipes/ratatouille.aspRecipes Ingredients · 2 onions · 1 large aubergine diced · 2 courgettes, diced · 2 red peppers, sliced · 2 green peppers, sliced · 4 large tomatoes, diced · 2 bay leaves · 1 tablespoons fresh oregano · 1 clove garlic, crushed · freshly ground black pepper Recipes Instructions Brown onion and garlic in non stick pan. Add the veg and tomatoes. Saute 4-5 minutes. Place mixture in baking dish, add herbs and pepper. Bake at 250C for 45 minutes. Serves 4. (but I tend to just boil it for a bit, then eet it lol. Make a giant panful, cos u can eat as much as you want ;D

It doesn't work out as expensive to make as other new recipes do. I mean if I set out to make a new cake, it always seems to cost well over a fiver And the same for anything new I try to make with meat in, because I hardly ever buy meat, I often go 'ow' at the price

Yum! Baz was in sainsburys' yesterday, he said they had free scratchcard things where you can win free fruit and veg

Your Ratatouille Recipe is lovely I made loads of it last night so I have plenty left.
I got a card in Sainsburys as well you get them if you spend £10 or more. I got a punet of plums free, it's all to do with helping you get your 5 a day thing, you don't always win but it's nice when you do.

I don't know how exciting it is but you can have a big pot always on the hob and eat whenever you get peckish, because there's no sugar or fat in it, only veg:) That's just what I need- twice I've had a card now tho and haven't won anything lol
